Blueberry Cheese Layer Cake


Salam...

Hmm..wow, we already in the mid of Ramadhan...how times flies. Another 13 days to go. Eid Ul Fitr coming up but i still didn't do anything, i mean bake anything. My mom already ordered her layer cake from me hahaha...but i still didn't have time to do it for her.

I'm not sure wether i'm going to bake cookies or not. I'm more interested in cake & dessert. I don't know why, maybe...MAYBE....i felt like i'm done with cookies. No..no..no, i'm not declaring war with cookies heheh, i still like to eat them, it just that when i was young, my mom selling cookies for Eid. So my sister & i, since we are the elders, help my mom to baked it. My mom & i in the creation department & my sister in the oven department hahaha...i miss that moment. So it's went on and on and on since i was 8 or 9 years old until 17 years old, then after that, my mom retired hehe..aanndd...to make it worst hahah...when i went to visit my neighbour's house with my friends during Eid, they served me & my friends with my mom cookies!! I was like WHAATT?!! and its not just one house u know...haishhhh...& my friends gave me this wierd look & asked me "liza, why u don't like cookies??"..Hah!!

Ok, now i'm taking u back from my memory lane..hahah..sorry, talking abt Eid made me jump straight to my memory lane. Ok, this is one of the layer cake i plan to bake for my mom & my MIL. Hope u can bake it for Eid too...here the recipe...

Blueberry Cheese Layer Cake

A
  • 400g butter
  • 250g cream cheese
  • 100g caster sugar
  • 14 egg yolks
  • 5 tbsp sweetened condensed milk
B
  • 7 egg whites
  • 100g caster sugar
  • 1/4 tsp cream of tartar
C (sifted all together)
  • 220g superfine flour
  • 100g coffeemate / creamer
  • 1 tsp baking powder
  • 200g blueberry filling
  • Purple food coloring (optional)
Preheat oven 180C & greased 8 x 8 inch cake pan.
A - Whisk butter, cream cheese, sugar until white & creamy, add in egg yolk one at a time & condensed milk & whisk until well combined. Set aside.
B - In another bowl, whisk egg white & cream of tartar until bubbly, add in sugar, a little at a time until soft peak.
C - Fold in carefully all ingredient C into A.
Fold in B carefully until well combined.
Divide batter into 2 portions, one part add blueberry filling & food coloring.
Use upper grill, scoop 1/2 cup of plain batter, spread evenly on your prepared cake pan & bake for 7 minutes. Next, spread blueberry batter & bake another 7 minutes. Repeat until all the batter used up.
