Vegetable Fritters

Salam all,

Deep fried. One of my favorite method of cooking. What about u? I know most people don't like deep fried especially for those who are very health concious. Of course considering oil consumption, cholesterol and all that...BUT...hahhaha (Capital B yeah..) what would u do if thats the only way to make your children eat vegetables?? Yeah..i know there is a lot of way to lure kids to eat vegie, but my kids, i think they had a special build in sensor in their tongue so that they can detect even a very small amount of vegie..

Its look like tempura, i know, but i don't have any intention to made a tempura that day, its just came into my mind. Why don't i deep fried them, dip it in the batter & deep fried. So i choose my oyster mushroom & sweet pea to dip in the batter & to my surprise, my kids ate it & to my bigger surprise, they only leave only 2 pieces for their father. For me, as long as they like it, i will cook it again :D..here the recipe...

Vegetable Fritters
  • 1 cup all purpose flour
  • 1/2 cup cornstarch
  • 1 tsp salt
  • 1 tsp pepper
  • 1 cup or more ice cold water (adjust the amount of water used to get the right consistency)
  • Your choice of vegetables.
For the batter, add all purpose flour, cornstarch, salt & pepper in a medium size bowl.
Add ice cold water until u get the right consistency. The right consistency is like a baby food & when u dip your vegie, it will well covered.
Deep fried until golden brown.
