Twice Baked Potatoes



Hi all...

I know its too late to wish u all a Happy New Year...but who cares?? right heheh. So Happy New Year guys..oohh..and Happy Chinese New Year too :).

I'm too busy right now to update my blog. Thanks to all of u who still visiting my blog. I'll try my best to update regularly but well...i'm not making an excuses here but i can't wait for February comes to end. Whyy?? well...work, work, work & nothing else until end of February. Not that i'm resigning hehe...at that time its already past all the important due date for the important report heheh.

Ok..i'm not going to talk abt my work right now. Too tired of it. Today i want to share with u my new recipe for potatoes. This is first time i try this recipe. Its easy but not fast enough if u don't have much time at home to cook for dinner like me :). For sunday dinner...oooo yeaahh...hhehe. Ok, here the recipe...

Twice Baked Potatoes
  • 2 large potatoes
  • 1 small pot of hot water
  • 2 tbsp butter
  • 2 tbsp fresh cream
  • 1 tsp black pepper
  • Spring onion, chopped
  • Grated Mozarella cheese
  • Aluminium foil
Preheat oven to 200C.
First, wash your potatoes, scrub the skin until its really clean & put it in the hot water for a few minutes.
Covered your potatoes with aluminium foil, baked it for 1 hour.
Remove the aluminium foil & set aside.
Cut the top of the potatoes (horizontal), scoop out the flesh into the small bowl. 
Add butter, fresh cream & black pepper and mash all together.
Scoop the mashed potatoes back to the skin again & sprinkled with grated mozarella cheese.
Cover the bottom of your potatoes with the used alummininum foil & baked again until the cheese melted & a bit golden in color.
Sprinkled with spring onion.
