Pandan Layer Cake


Salam,

Ok, this is one of the layer cake i baked for my mum for Eid. I made 2 type of layer cake, but the other one i will post it later ok. I got the recipe from one of my favorite food blog, coz so far her recipe can be trusted ya. My mum very happy with this cake, i'm so glad she liked it.

This cake used 21 egg yolks & 10 eggs white!! To me its quite a lot since i only used hand mixer. But i just don't care, i really2 want to try it & the result, walllaaaa...very nice...^^,. My hb said if i really love to make a layer cake, why not i sell it. I was like...eerrkk..sell it?? i only had a hand mixer!! Boleh tercabut tangan hahah...so, order anyone???...hihi..

A
  • 450gm butter
  • 200gm caster sugar
  • 21 egg yolks
  • 4 tbsp condensed milk
B
  • 160gm caster sugar
  • 10 egg whites
  • 1/2 tsp cream of tartar
C
  • 270gm Hong Kong flour
  • 4 tbsp coconut milk powder
  • 1/2 tsp baking powder
D
  • 2 tsp green coloring
  • 2 tsp pandan paste
Whisk butter, sugar & condensed milk until fluffy.
Add egg yolks one at a time & whisk until well combined, set aside.
In another bowl, whisk egg whites & cream of tartar until foamy, gradually add sugar & continue to whisk unti stiff peak.
Sieve ingredient C & add to egg yolk mixture then fold in egg white mixture.
Divide batter into two equal part, one part add in pandan paste & green color, the other one remain plain.
Greased 8 x 8 cake pan & line the bottom part with baking sheet.
Start the first layer with upper & lower fire, second layer & above, use grill (upper fire) only.
Bake at 160C & 7 min for every layer.
After the last layer, cover ur cake pan with aluminium foil & bake it for another 10 minutes using upper & lower fire.
