Baked Curry & Mayonnaise Chicken


Salam Eid Al-Adha all,

I hope its not to late to wish happy Eid Al-Adha to all of u.

My family celebration was very simple. I baked carrot cake & plain old butter cake for my mum, cotton soft japanese cheesecake with chocolate topping for my in laws. Ok..i didn't take any picture any of it :D. Sorry guys, its because i want to do it again...this time i'll do it properly. Yup...u heard me right, its not proper.

Ok, let me explain, i baked my carrot cake without the famous cream cheese topping (my favorite topping) coz my mum doesn't like it. She just like a simple carrot cake wothout topping. Another cake also my mum favorite cake, plain butter cake...hmmm, to think again, i should take picture of that cake & post it here. For cotton soft japanese cheesecake u can find the recipe here.

So, now about this chicken recipe, This recipe just came to me out of the blue hahah...this recipe created based on what available in my fridge that time & as usual, all in one recipe hehe..means with vegetables all together in one casserole. Here the recipe...

Baked Curry & Mayonnaise Chicken 
  • 6 pieces of chicken (any part)
  • 2 tbsp mayonnaise
  • 1 tsp curry powder
  • 1 tsp black pepper
  • 1 tsp thyme
  • 1 tbsp garlic powder
  • 1 onion, slices
  • A handfull of sweet peas
  • 1 carrot, thickly slices
  • 1 tbsp olive oil
  • 1 tsp black pepper
  • Lemon juice from 1/2 lemon
  • 2 tbsp butter
Preheat oven to 180C.
Line your casserole or baking pan with aluminium foil.
In a bowl, combined all together mayonnaise, curry powder, black pepper, thyme & garlic powder, mix well.
Add in chicken & let it marinate for 30 minutes.
In another bowl add in all cut vegetables & onion, add in olive oil, black pepper & lemon juice, mix well & pour it in the prepared baking pan.
Put the marinated chicken on top of the vegetables & top it with butter.
Baked it for 45 minutes.
