Lemon Chicken

 

Salam all,

How's your day? Mine was very hectic lately. My older son just recover from high fever & now my baby turns. Sometimes its really hard to be a working mum. To balance your job & family coz i love both. Of course family is a top priority to me. That's why no matter how busy i'm at work, i'll try my best to go back on time every singly day so that i can cook for my family. But i'm very grateful i have a very understanding husband who always know when i feel really tired & he just ask us to eat at the restaurant :).

Ok, so this is one of my working day dishes. Its very easy & its chinese food so its suitable for kids. Especially my kids who don't like spicy things. Here the recipe...

Lemon Chicken
  • 10 strips boneless chicken fillet
For marinate :
  • 3 tbsp soy sauce
  • 1 tsp salt
For batter:
  • 1 egg, lightly beaten
  • 1/4 cup cornstarch
  • 1 tsp white pepper
For sauce:
  • 1 tbsp sugar
  • 1 cup chicken stock
  • 2 tbsp cornstarch
  • Lemon juice from 1/2 lemon
  • 1/2 tsp salt
  • 1 tbsp butter
Marinate the chicken strip with soy sauce & salt for 30 minutes.
Mix well cornstarch & white pepper, dip the marinated chicken into the egg & dip again into the cornstarch mixture, deep fried until golden brown, set aside.
For the sauce, melt the butter, add all the ingredient for the sauce & stir until the sauce thicken.
Pour the sauce on top of the chicken. Serve hot.
