Rainbow Cake



Assalamualaikum..

My first attempt to frost a cake. How was it? Ugly...yeah i know hahah...Its my latest hobby. My plan is to learn how to frost a cake beautifully. I love simple deco, but i still want to learn all the flowers and leaves and borders and cartoons etc...i didn't go to baking class, i just learnt from Chef Google and Chef Youtube. U know them? Of course u do. I did deco a few cakes after this one, i will show u the picture later okay.

So back to this cake. You already knew the cake right, its popular. In fact, i already had a few orders from my colleague. Alhamdulillah they didn't mind about the ugly deco hahahah. I used Martha Stewart recipe, coz thats the original recipe. Some people prefer to use sponge cake recipe, i choose to stick with the original, here the recipe...

Rainbow Cake 

  • 3 cups all purpose flour
  • 4 tsp baking powder
  • 1/2 tsp salt
  • 1 cup butter
  • 1 1/2 cups caster sugar
  • 5 egg whites
  • 2 tsp vanilla essence
  • 1 1/2 cups fresh milk
  • Colour - Orange, purple, red, blue, green and yellow
Sift together flour, baking powder and salt.
Combine butter & sugar and beat until light and fluffy.
Add in egg whites one by one & beat until light and fluffy.
Add in flour alternate with fresh milk (flour, milk, flour, milk, flour) beat until well blended.
Divide the batter to 6 equal bowl & add in color.
Bake one by one using 8" cake pan at 170C or 180C for 10 to 15 minutes.

Cream Cheese Frosting
  • 500gm whipping cream
  • 375gm cream cheese
  • 60gm icing sugar
  • 110gm butter
  • 2 drops of lemon juice
Beat the whipping cream until soft peak, set aside.
In the different bowl, whip butter, icing sugar and cream cheese until light and fluffy.
Fold in whipping cream until well blended.

Fish Fillet In the Baked Bean Sauce


Salam all,

Just a quick post today. Not because i'm busy, but i want to do a blog walking after this muahahah...I love to try a new recipe, especially when its so simple like this one. Plus, i just used my leftover breakfast, baked beans.

Some people are so creative when its comes to food. Why didn't i think about it before coz its so delicious. But i change the recipe a bit. I used fish fillet, coz i want the crispy texture on my fish to match with my sticky baked bean sauce. Am i creative??? Naahhhh...heheh..Here the recipe...

Fish Fillet in the Baked Bean Sauce

  • 3 pieces breaded fish fillet
  • 3 cloves garlic, pounded
  • 3 shallots, pounded
  • 1/2" ginger, pounded (or u can blend this 3 ingredients together)
  • 2 tbsp chilli paste (i used my chilli paste)
  • 1 big onion, sliced
  • 1 or 2 potato, sliced & deep fried until cooked
  • 1 can baked bean
  • 1 cup water
  • Salt to taste
Deep fry your fish fillet or any kind of fish u prefer and set aside.
Heat up a few tbsp of oil & stir fry pounded ingredients until fragrant.
Add in chilli paste & stir fry until the chilly seperated from the oil.
Add in baked bean, water, onion & salt & let it boil.
Add in cooked potato & stir well.
Pour onto your fish fillet.

Marble Bread Pudding



Salam all,

Ok, i'm still alive for starter hehehe..well i know its too late to wish to all my reader a happy new year :). May all your dream, new resolution, your wish will come true. Hmm..how time flies, my kids getting bigger, i'm getting older, times makes you know more about other people around you. They never fail to surprise you everytime.

My kids getting bigger and more demand lately. We try our best to give them the best of everything but at the same time not to spoil them. My daughter already ask me whether she can join me in the kitchen lately. Huh..she just 5 years old. Well, i decided to give her some experience. Know what? We bake together!! Well, at first i thought she just to play around or just to make me mad, but surprisingly she serious!! She do whatever i ask her to do and she really felt satisfied when everything finished & can't stop telling her papa, her aunt & her grandmother that she'd actually bake a cake.

I went to bakery supply and found this fish mould. Its so cute, i grabbed 2 of them heheh..so i decided to try this pudding recipe since my kids love all the jelly kind of dessert. Here the recipe...

Marble Bread Pudding
  • 4 sliced of white bread
  • 2 eggs
  • 1/2 cup of condensed milk
  • 170 ml evaporated milk
  • 8gm agar2 powder
  • 1/2 cup sugar
  • 2 tbsp butter
  • 3 1/2 cup water
  • 2 tbsp cocoa powder
Boiled 3 cups of water, sugar & agar2 powder.
Blend until smooth 1/2 cup of water, bread, condensed milk, evaporated milk & eggs.
Pour bread mixture into the water mixture.
Add in butter, cooked until the mixture starting to boil & turn off the heat.
Divided the mixture into two & add cocoa powder into one of the mixture.
Pour the mixture into the mould & do the marble effect.
Refrigerated until set.

Burger Roll


Salam all,

This is our quick dinner recipe. Very simple, you can use any cooked meat u have or any leftover will do. I used my homemade beef patty to make this roll. Actually i felt boring with regular burger bun so i made a change to use tortila wrap. The good thing is, when i grill my stuffed tortila wrap, it made my burger taste so light & crunchy. Its full of vegies & my kids loved it. Here the recipe...

Burger Roll
  • 2 pcs tortilla wrap
  • 2 slice cheddar cheese
  • 2 cooked beef patties, sliced
  • 2 pcs salad leaves, thinly sliced
  • 1 tomato, remove the seed & cubed
  • 1 tbsp butter
  • 1 capsicum, thinly sliced
  • 1 package button mushroom
  • 1 tsp black pepper
  • Mayonaise
Melt the butter in the frying pan. Add capsicum, mushroom & black pepper, stir fry until the vegetables soft. Set aside.
Take the tortilla wrap, place the cheddar cheese, put the beef patty on top of the cheese. Put 2 tbsp of cooked vegie & top with salad leaves & tomato.
Add mayonnaise, carefully roll the wrap & grill in the frying pan for 1 minute each side.
Cut the roll & serve.

Blueberry Cheesecake


Salam all,

This is not the first time i bake cheesecake, but this is the first time i used recipe from Alex Goh books, the famous baker. The truth is his recipe can be trusted. I follow the recipe to the T & the result, wallaahh...perfect cheesecake heheh. Now i'm looking forward to try another recipe from his books.

This cheesecake is actually New York cheesecake, i just pour the blueberry filling & there u go i got a Blueberry cheesecake muahahah. Here the recipe...


Blueberry Cheesecake

Base

  • 200g Oreo sandwich biscuits, finely crushed
  • 50g melted butter
Filling
  • (A)
  • 750g Cream cheese
  • 150g sugar
  • (B)
  • 30g flour
  • 1/2 tbsp vanilla essence
  • 1 lemon zest, grated
  • 2 tbsp lemon juice
  • (C)
  • 2 eggs
  • 1 egg yolk
  • (D)
  • 150g sour cream
Mix the base ingredient & press the biscuit mixture onto the bottom of greased 8 inch springform tin.
Cream (A) until smooth. 
Add (B) & cream until well blended.
Add (C) one at a time & cream until light & smooth.
Add (D) & cream until well combined.
Pour the cheese filling over the prepared biscuit base.
Bake in water bath at 160C for 60-70 minutes or until centre is almost set.
Turn oven off & remove water bath from the oven.
Leave cake in the oven for 1 hour with door slightly open.
Run a small knife around the rim of the pan to loosen the cake, set aside to cool.
Cover the cake, refrigerate for 5 hours of overnight.
