Chocolate Mocha Layer Cake
Finally!!...finally..finally..hahah finally i manage to baked a 'perfect' (this is my own judgment yeah) layered cake ^^,.Huhh!! pheww..u have no idea how careful i am. I whisk my batter carefully, weighted it carefully so that i can get the perfect layered cake. All my hard work are sooo worth it & this recipe are definitely a keeper. Its soft, moist & full of flavors. I'm going to make this again soon heheh...with different flavor so stay tuned....here the recipe...
Chocolate Mocha Layer Cake

A
- 250g butter
- 150g caster sugar
- 14 egg yolks
- 5 tbsp sweetened condensed milk
- 7 egg whites
- 150g caster sugar
- 1/4 tsp cream of tartar
- 160g superfine flour
- 40g horlick
- 1 tsp baking powder
- (a)1/4 tsp yellow coloring + 1 tsp vanilla essence
- (b)1 tbsp mocha emulco
- (c)1/2 tbsp chocolate emulco + 2 tbsp cocoa + 3 tbsp warm water (mix until well combined)
Preheat oven 180C & greased 8 x 8 inch cake pan.
A - Whisk butter, sugar & condensed milk until white & creamy, add in egg yolk one at a time & whisk until well combined. Set aside.
B - In another bowl, whisk egg white & cream of tartar until bubbly, add in sugar, a little at a time until soft peak.
C - Fold in carefully all ingredient C into A.
Fold in B carefully until well combined.
Divide batter into 3 portions, one part add in D(a), another part add in D(b) & the last add in D(c).
Use upper grill, scoop 1/2 cup chocolate batter, spread evenly on your prepared cake pan & bake for 7 minutes.
Finished off chocolate batter then followed by mocha & vanilla batter.
