Mini Banana Chocolate Chip Pancakes


I just bought a cookbook, "Dessert : 500 Delicious Recipes" a few months ago. Yeah, there is 500 recipes in there. I don't know how many times i read this books, i love to drool to their delicious pictures & try to imagine how its taste like..hmmm...yup, i'm weird that way ^^,. So i choose this recipe for my family's breakfast. Now i know that banana & almond is a really good combination. U can taste the sweet banana, bittersweet chocolate chip & the crunchy almonds all together at the same time. Very delicious. Trust me, this little morsels will go down well with both adults & children alike. Here the recipe...


Mini Banana Chocolate Chip Pancakes

  • 2 ripe bananas
  • 2 eggs
  • 1 cup milk
  • 150g self rising flour, sifted
  • 25g ground almonds
  • 1 tbsp caster sugar
  • pinch of salt
  • 1 tbsp chocolate chips
  • butter, for frying
  • 50g toasted flaked almonds, for serving
  • Whipped cream, for serving
Mash the bananas in the bowl. Beat in the eggs & half the milk.
Mix in the flour, ground almond, sugar & salt. Add the remaining milk & the chocolate chips.
Stir the mixture well until it makes a thick batter.
Heat the knob (pat) of butter in a non-stick frying pan. Spoon the pancake mixture into the pan in heaps, allowing room for them to spread. When the pancake are lightly browned underneath & bubbling on top, flip them over to cook the other side. Make more pancakes in the same way.
Spoon the whipped cream on to the pancakes & decorate with flaked almonds.
Serve immediately.
