Light Mushroom Soup


Salam,

I'm sucker for mushroom. Ok..that's my confession heheh...actually yes, i'm a really big fan of mushroom. Never failed to bought at least 1 packet of mushroom everytime we went to groceries store. Everything with mushroom taste good to me. Sometimes i imagine to get all kind of mushroom & just stir fry them & eat them just like that..mmm, heaven...yep! I'm weird that way hahah..

So i found this recipe, so simple, so healthy, so light & the main ingredient is mushroom so all of sudden this recipe is in the top of my 'things to do' list. Its almost having my imagination comes to reality but as long as its mushroom, i like it anyway...here's the recipe...

Light Mushroom Soup
  • 3 cloves
  • 2 cardamom pods
  • 1 cinnamon stick
  • 1 star anise
  • Peppercorns
  • 2 ltr chicken or beef stock
  • 1 onion, chopped
  • 2 cloves garlic, smashed & peel
  • 2 or 3 cups of any kind of mushroom u like
  • Salt to taste
  • Sliced scallion, for garnish
  • Sesame oil, for garnish
Add spices, onion & garlic to the stock, bring it to boil.
Then lower the heat & simmer gently for about 45 minutes.
Add salt to taste.
Add mushroom, & simmer for another 15 minutes or until cooked through.
Garnish with scallions & a few drop of sesame oil when serving.
