Congo Bars

Hii all...
Wow..its been a while since the last time i update this blog..haha...i have only one very good reason....i'm not cooking heheh. So..last weekend i manage to try a few recipe which i think very easy, fast (all in one) & of coz delicious. First...Congo Bars...or..shud i say Congo Cake hahaha...why?....sigh..i shud use my sheet pan..not my 9" x 9" cake pan. Its suppose to be more thinner to get more gooey texture..but oh don't worry...its still delicious. Thanks to kak Rima for this recipe. Here the recipe...

Congo Bars
  • 2 3/4 cups plain flour
  • 2 1/2 tsp baking powder
  • 1/2 tsp salt
  • 150g butter
  • 320g brown sugar
  • 3 eggs
  • 1 tsp vanilla
  • Chocolate chips 
  • Chopped pecans (optional)
Sift flour, salt & baking powder & set aside.
Combine butter & sugar using a mixer until well blended.
Add eggs, one at a time to sugar mixture.
Add vanilla.
Add flour & mix until combined.
Stir in chips & pecans.
Grease your sheet pan with butter & spread batter evenly into dish.
Bake at 170C for 30 minutes or until top is golden brown.
